Mediterranean cuisine is known for fresh ingredients and simplicity, but that doesn’t mean that it can’t be exciting and inventive. Never one to rest on his laurels, Michelin-starred chef Antonio Guida is constantly developing new dishes and combinations to satisfy his insatiable  love of food.
The menu at the Il Pellicano restaurant continually changes to reflect the bounty of the seas and what’s on offer from our rigorously local purveyors of fine meats and organic, seasonal fruits and vegetables. Every day, we showcase a different extra virgin olive oil from one of Italy’s many and diverse olive-producing regions.
Don’t be surprised if chef Antonio Guida has concocted some magical new delight that he sends to your table, on the house, to tickle your palate. Keep an eye out for our procession of desserts. And, if you’re a chocolate lover, make sure that you flag down our Tuscan  chocolate trolley.
The chef’s “Calamandino” tasting menu is an artfully constructed tour through the finest, most inventive dishes Mediterranean cuisine has to offer. It’s also the perfect excuse to linger for an entire evening in our beautiful dining room or on the candle lit restaurant terrace.

Our selection of homemade breads, pastries, jams and yoghurts, fresh vegetable and fruit juices, local cheeses, prosciutto, organic eggs and mocha-pot-brewed coffee (the way Italians make it at home) greets you at the start of your Il Pellicano day and is included in your room rate.
